- While some recipes easily integrate whole grain flours, others require some adjustments. Muffins and scones are generally an easy transition, whereas breads may require some fine-tuning - such as less proofing time and more hydration.
- The colour!! There is often an association with darker coloured baked goods tasting 'healthy', and while it is true that whole grain flour is healthier than white flour, that taste is nutritious and can improve the flavour profile of baked goods.
- While we use 100% whole grain flour in all of our baking, that doesn't mean you have to. If you are new to whole grain flour, you can start by slowly incorporating it into your baking.
- Mixing and matching flour is where it is at! We have said it once, and we will say it again: diversity is key. Different flours house different nutrition; by incorporating a mix of flour types into your baking, you are benefiting from that diversity. On top of that, there is something to be said about the baking quality of mixing different flours. This is still something that we are playing with, so if you find a magic combo, let us know!
